Wooden buttons in a groove on the inside of the rails are the traditional answer: on the end rails they slide along the groove, and on the long rails they slide in and out of it, so fitted at the dry end of the year each one needs about 6 mm of clearance between its shoulder and the rail. Steel desktop fasteners or slotted angle brackets do the same job with less work.

Wide walnut boards are expensive, so tops are often glued up from narrower stock with the heartwood colour matched. That is fine for movement, since the glued panel moves as one, but pick straight-grained boards to help keep it flat. Finish the underside as well as the top so both faces take up moisture at the same rate.
